WHEN IN CHICAGO: AU CHEVAL

From the front seat of the cab, I looked back to see Jay beaming brilliantly w/anticipation of our arrival at Au Cheval.
Jay: Ready for the best burger in Chicago?
Allie: I was born ready (especially for burgers).
Jay: What about marrow? The marrow at Au Cheval is a must.
Allie: I'm game.

BONE MARROW WITH A WHISKEY CHASER

For an experience that takes the form of roasted marrow bones, beef cheek marmalade & toast, there are only three letters to describe such a moment - OMG. Seriously, mind blown. It would seem that glutenous behavior has no off switch, as we kept the lights on with libations to follow. A shot of whiskey served up and shot from the same bone once filled with seemingly magical marrow served as the climactic event of the evening.

BURGERS, FRIES & EGGS, OH MY!

You don't have to sell me on the 'everything's better with bacon' bit. I already subscribe to that truth. It was the 'egg on top' not only applied to the burger but to the fries as well that rocked my world even further off its culinary foundation. As it turns out, 'everything's better with bacon AND an egg' is a more accurate testament when it comes to pleasing one's palate.
